The recipe for spinach with yogurt, and the use of green vegetables in the preparation of food, is part of the standard Mediterranean cuisine. This recipe also includes thick yogurt, as a typical Mediterranean note.

  • 1,2 kg of spinach
  • 50 g of butter
  • 1 cloves of garlic
  • crushed pepper (hot)
  • 4 dl yogurt
  • so
  • 8 pieces of bread (slices, toasted)
  • 4 pieces of eggs
  1. Clean and wash the spinach well. Put it in a deep dish and cook it for about 15 minutes, only in the water left on the leaves. Drain it, and pass it through a sieve. Add 25 g of butter to the chopped spinach mass, then simmer it at a moderate temperature, stirring often, until it thickens.
  2. Add 2 dl of yogurt, salt to taste, crushed hot pepper to taste and garlic, and continue to simmer until the mixture thickens again and becomes similar to cream. Add the remaining 25 g of butter, cut into small pieces and set aside.
  3. Fry 4 eggs, on the eye.
  4. Toast 8 slices of bread.
  5. Pour the prepared spinach into a heated plate and serve the fried egg on top of the spinach mass. Serve with toasted bread. You can pour the rest of the yogurt over the spinach if you like.
