As part of the preparations for the publication of the book Traditional recipes of Serbian cuisine it was the turn of the specialties of eastern and southern Serbia: prpeć, samsa, trjanica and pounded salad. Despite the great heat, we prepared and photographed the aforementioned specialties. And, of course – enjoyed the tasting!
Prep
Prpeć (propeć) is a puff pastry pie with cheese filling.
Samsa
Samsa pita is a favorite recipe from Vranje, and many call it the only true brand from Vranje. It is an empty pie made of leafy (twisted) crusts, which, immediately after baking, is poured with a mixture of sour milk (some people like to add a little cream, even cheese) and chopped garlic.
Rubbish
A favorite salad of southern and eastern Serbia, it is made from dried peppers and leeks, and rubbing the "meat" of dried peppers during preparation is the reason why this salad got its name.
Chopped salad
Roasted peppers, tomatoes, parsley, oil and a little "knocking", pressing - crushing with an avan pestle ("knocking") and let it rest for a while. An explosion of colors and flavors, as a side dish with every dish!
Bojan Marinkov was the master of preparation for the prpeć and samsa, so we owe thanks to him and our hostess Gordana Marinkov for their great contribution to our project.
And the recipes? Well, you will have to wait for the book to come out, and there will be a video that will show in detail how to make prpeć and samsa...
