The fry can be kept in the refrigerator for a long time or it can be spread out in the freezer and taken out as needed. A delicious and traditional dish. The recipe is a real traditional one. Somewhat forgotten.

Fry, ingredients:

  • 700 g of peeled onion
  • 700 g of cleaned leeks
  • 1 tablespoon fat
  • 1 kg of meat from a boiled pig's head
  • 1 kg of cooked black liver
  • 1 kg of boiled intestines
  • 2 handfuls of small crackers
  • 2 heads of garlic
  • 4 bay leaves
  • salt to taste
  • pepper to taste
  • allspice to taste

Frying, preparation:

  • Separate the cooked meat and cut it into smaller pieces.
  • Cut the liver into cubes.
  • Intestines into larger pieces.
  • Heat the fat.
  • Add the diced onion, add a little salt and fry until it has a glassy color.
  • Add leek cut into rings and continue frying.
  • When the onion turns brown, add the meat, liver, mix and fry for about 10 minutes.
  • Add the intestines.
  • Mix everything and add garlic and spices.
  • When adding the ingredients, offal and meat release their juices.
  • Fry until the water evaporates.
  • Add cracklings and mix.
  • The fry is ready to serve.

Preparation time about 1 hour and 30 minutes.
