Preparation time is about 40 minutes, and the recipe is designed for 4 people.

Italian-style grilled chicken is quick to prepare. It only takes a few minutes on a hot grill or grill pan to get a perfect result.

  • 4 pieces of chicken breast (boneless fillet, 4 pieces single, or 2 double)
  • sea ​​salt (a little)
  • pepper (a little)
  • 1/2 cup olive oil
  • 1 piece of lemon juice
  • 2 teaspoons of mustard
  • 2 cloves of garlic
  • 600 g of cherry tomatoes
  • 50 g of arugula
  1. Buy boneless chicken breast fillets (2 double, or 4 single). Wash well, and leave to drain well on a paper towel. Thin with a meat mallet. The thickness should be about 1 cm. Place the chicken breasts in a mixing bowl and pour over and rub in half the lemon juice. Cover the dish with plastic self-adhesive foil and leave the meat to marinate in the refrigerator for at least half an hour, and if you have time, leave it for 4 hours.
  2. Grill on a medium-heat grill or grill pan for 5-10 minutes (2-3 minutes on each side). Add salt and pepper to taste.
  3. Preparation of the salad dressing: in a mixing bowl, combine the olive oil, mustard, finely chopped garlic and the remaining lemon juice. Add salt and pepper to taste. Mix until the mass is even.
  4. Baked chicken breast fillets, serve warm. Serve on a large plate. Place arugula leaves and cherry tomatoes next to the meat, and cover with dressing. You can also decorate with lemon slices. To taste, you can pour extra virgin olive oil and add grated parmesan cheese over the salad.
