Old fashioned caramel wafer.

Old fashioned caramel wafer, ingredients:

  • one package of large wafers
  • 1 liter of milk
  • 800 g of sugar
  • 1 package of vanilla sugar
  • a full deep plate of ground walnuts
  • 125 g butter

Old-fashioned caramel wafer, preparation:

  • Pour milk and sugar into a deep saucepan, mix and cook on low heat for about 3 hours. The milk should be just boiling, not boiling. In the beginning, you need to stir from time to time, but towards the end of cooking, it will require more attention. You will easily notice how the caramel cooks and thickens.
  • At the end of cooking, add butter, vanilla and, if desired, ground walnuts and mix everything well so that the butter melts and the mixture comes together.
  • Cool the filling, it shouldn't be hot, but don't let it cool completely either. A hot filling will make the wafers tough, and a cold filling will not be well absorbed into the crusts. Fill the wafer, except for the last crust, then press it with a flat, heavier object (a large baking sheet) and leave it at room temperature for the filling to harden and the crust to soften a little.
