An old-fashioned recipe for collard greens from the Niš area, is prepared in the traditional way and baked in an oven (oven, hearth) in old-fashioned ceramic dishes.

All participants of the traditional cooking school led by professional chef Dejan Ilić, they will have the opportunity to learn to prepare many old-fashioned recipes, such as cabbage rolls. This recipe, like many others, will find its place in the book Traditional recipes of Serbian cuisine.

An old-fashioned recipe for greens salad from the Niš area, prepared in the traditional way and baked in an oven (furnace, hearth) in ceramic dishes.

  • 4 strings of wishes
  • 400 g of ground beef
  • 1 onion
  • 2 cloves of garlic
  • 1 carrot
  • 1 cups of rice
  • so
  • beaver
  • 1 glass of sour milk
  • 3 eggs
  • cup of oil (or fat)
  1. Remove the hard parts of the celery.
  2. Blanch the greens in hot water very briefly. Take out the scalded greens in cold water.
  3. Add the chopped carrot and onion to the heated, greased pan. Stir. Chop the garlic and add to the pan, stirring. Add minced meat, stirring. Add the cooked rice. Beat one egg and add while mixing. Spice it up. Simmer for a few more minutes.
  4. Spoon the filling onto the unfolded green leaves and roll up. Arrange the slices in a greased ceramic dish. Before baking, cover the slices with oil or melted fat. Put the slices to bake in the oven at 180 C.
  5. When the sausages are half ready, beat two eggs and mix with sour milk. Pour with a ladle over the sarmi and return to the oven to bake.
