An old-fashioned recipe for twisted pumpkin

An old-fashioned recipe for twisted pumpkin, made from woven, developed crusts, is one of the recipes that has lived its history and culture in Eastern Serbia for more than 100 years. She prepared the recipe for twisted pumpkin Snezana Kitanović, who is part of the author's team preparing the book Traditional recipes of Serbian cuisine.

Twisted Zucchini:

For two dumplings you need:

  • 1/2 kg of flour
  • 2 teaspoons salt (at least)
  • 300 ml of water (everything is measured precisely)

Twisted pumpkin, preparation:

  • Put the flour in a mixing bowl, add salt and immediately add all the water (300 ml).
  • Knead the dough by hand until you get a mixture, without even a little flour and lumps, let the dough rest for 15 minutes (that's exactly how long).
  • After that, sprinkle the place where you will roll out the noodles with flour and put the dough.
  • Divide the dough into two approximately equal parts and shape them into nice noodles.
  • Roll out the dough to the size of the pan in which you will place them (about half a finger thick).
  • Then grease it with a spoonful of oil and put a noodle inside, put a spoonful of oil over it and spread it, then put the next noodle... and so on, one on top of the other.
  • Let it "rest" for exactly 20 minutes (can be longer, shorter, not recommended).
  • Take them out on a tablecloth (they don't stick to the tablecloth), it's easier to develop them.
  • First, start stretching them from the middle (don't push your fingertips in), do the stretching with the pads of your fingers, gently... as soon as you've stretched one side, the other side goes, by itself.
  • Fill with the filling you want... I used pumpkin this time.
