There are people who say that beans are difficult for them to digest, and this usually happens when the beans are not cooked properly. Here's a tip to avoid this: the beans must be soaked in cold water for several hours. That water is thrown away. (If you want, you can cook them in the water they were soaked in, it does not affect the length of cooking or the taste). But cooking beans in fresh water eliminates digestive problems. When the water in which the beans are cooked begins to boil, reduce the heat and cook for about fifteen minutes, with the obligatory removal of the foam that forms during boiling. It will also help digest the beans better. Then it is covered and cooked on moderate heat. The cooking time varies, depending on the type of beans we are cooking. (And when we cook beans in a pressure cooker, it is good to cook them uncovered for the first fifteen minutes, removing the foam.) It is useful to add a bay leaf or a piece of kombu seaweed at the beginning of cooking, because both contain ingredients that help the digestive system.

Bean soup with vegetables by Cvijeta Mesić - Beans are often prepared in the form of soup with vegetables.

  • 1 cup of beans
  • piece of kombu seaweed (5 cm)
  • 5-6 cups of water
  • ½ cup onion (diced)
  • ½ cup burdock root (chopped into sticks (optional))
  • ½ cup carrots (diced)
  • ½ cup corn
  • cups ½ pea
  • ½ cup pumpkin (diced)
  • sesame oil (in the variant of stewing vegetables)
  • finely chopped parsley
  • so
  1. Soak beans (white or other) overnight.
  2. Discard the water in the morning. Pour fresh water and bring the beans to a boil. Remove the foam. After 15 minutes, cover and cook on medium heat. The length of cooking depends on the type of beans (lentils are cooked the shortest).
  3. a) Variant of cooking vegetables - vegetables are added to the beans at the beginning of cooking
  4. b) Variant of braising - braise the vegetables in oil, adding salt, add the beans when they are almost done, add more water if necessary, salt and cook everything together on low heat for ten minutes. At the end, add parsley.
