Svetosava pretzels - Nada Georfgijev-Gačić - Recipes and Cookbook online

Do you knead Svetosava pretzels for St. Sava? On January 27th, Saint Sava is celebrated as a school holiday and it is customary to eat pretzels!

Svetosava pretzels, ingredients:

  • about 1 kg of flour
  • 40 g of fresh yeast
  • 1 teaspoon of salt
  • 2 dl of milk
  • 2 dl of water
  • 1 dl oil
  • 1 egg for coating

Salty dressing:

  • 3 tablespoons flour
  • 1 spoon of salt
  • half a cup of cold water

Note: when whipped, it must be very thick and salty.

Svetosava pretzels, preparation:

  • Stir the yeast in half a cup of warm milk with a teaspoon of sugar and flour. Leave it warm to rise.
  • Mix flour and salt in a deep bowl, add prepared yeast, oil and warm milk/water. Knead a fine dough that does not stick to your hands. If necessary, add a little more flour. Leave in a warm place for half an hour to double in size.
  • Separate small pieces of dough, spread with your fingers into a long stick, and then shape pretzels. The thinner the sticks, the prettier the pretzels will look. Arrange them on a tray and let them stand for another ten minutes while the oven heats up.
  • Before baking, brush with beaten egg and bake at 200 C for about 15 minutes.
  • At the end of baking, as soon as the pretzels get a nice color, take them out of the oven and cover them with salty dressing.
  • Return to the oven for a few more minutes to brown nicely and the dressing to dry.
