Pork in tomato sauce with red beans.

  • 500 g of pork
  • 300 g of red beans
  • 1 piece of onion (larger heads)
  • 3 cloves of garlic (2-3 cloves)
  • 1 piece tomato (larger)
  • 4 tablespoons of oil (3-4 tablespoons)
  • 2 dcl of water
  • so
  • 1 tablespoon of ground red pepper
  • 2 bay leaves
  • 3 dcl tomato juice
  • parsley (chopped)
  • pepper (ground)
  1. Wash the beans, cover with water and leave to stand overnight.
  2. The next day, drain the water, pour another one and put it on the fire and cook for 5-6 minutes.
  3. Drain the water again, pour another 2-3 fingers above the beans, add 2 bay leaves and cook until soft.
  4. Cut the meat into cubes.
  5. In 3-4 tablespoons of oil, fry the meat on all sides until it turns brown, add finely chopped onion and garlic and fry for another 2-3 minutes, then add peeled and diced tomatoes, salt, ground pepper, 1 tablespoon of ground red pepper and 2 dcl of warm water. Cover and cook until the meat is tender.
  6. Add 3 dcl of tomato juice and boiled beans drained of the liquid to the softened meat.
  7. Cook on low heat for another 10-15 minutes. If necessary, add salt and pepper. Sprinkle with chopped parsley.
