Tain - bread is baked from a mixture of rye and white flour in a ratio of 70 to 30 percent, which saved the Serbian army from starvation during the liberation wars from 1912 to 1918. Tain in Turkish means serving. Each soldier received 800 grams per day.

Here's how to make magical TAIN bread.

Tain, ingredients:

  • 3 cups of flour (rye and white flour),
  • 2 teaspoons of fine salt,
  • a quarter of a teaspoon of dry yeast and
  • one and a half glasses of water.

Tain, preparation:

  • Mix flour, salt and yeast, then add water and mix with a spoon or a whisk. Cover and let it rest for 12 hours (you can put the bowl with the dough in a plastic bag if you don't want the cover to stick).
  • After that, mix again and let it stand until air bubbles appear on the surface of the dough, which can take 7 to 12 hours or longer.
  • Place the dough on the work surface, which you previously sprinkled with flour, and fold it like an envelope, then turn it over and cover it with plastic film and let it rest for another hour or two.
  • First, heat the pan (you need a pan with a lid), half an hour before rolling, then put the dough in the pan, cover and bake for half an hour at 250 degrees. After that, remove the lid and bake for another 15-20 minutes.
  • It should have a dark crust, if not bake a little more until it does, then wrap the bread in a cloth and let it cool for an hour and only then the process is complete.
