Tagliatelle Liguria - delicious tagliatelle... with a wonderful sauce...
Ingredients needed for the dough:
- 350 g Swiss chard
- 2 pieces of eggs
- 1 teaspoon of salt
- 500 g of flour
- 3 spoons of oil
Ingredients needed for the sauce:
- 400 g of mushrooms
- 3 pieces of tomato
- 2 clove of garlic
- so
- basil
- sugar (a little)
- dry herbal spice

Still needed:
- 2 tablespoons of butter
- 100 g of cheese (or parmesan...)
- Wash and blanch the Swiss chard.
- When it cools down, blend the Swiss chard and eggs.
- Pour the flour on the table, make a small indentation and pour the blended Swiss chard with eggs, salt and oil into it.
- Knead a smooth dough and leave for about 45 minutes. to rest.
- During this time, clean the mushrooms.
- Put the tomatoes in boiling water for a short time and then peel them.
- In a little oil, briefly fry the finely chopped garlic, then add the mushrooms, when their juice boils, add the chopped tomatoes.
- Salt and add a little sugar, dry herbs and basil.
- Roll out the dough thinly, cut it in half and wrap it in two rolls.
- Chop the rolls thinly to make tagliatelle.
- Add the tagliatelle to the boiling water, and when they are done, cook them for 2-3 minutes.
- Melt 2 tablespoons of butter and add grated cheese, add the tagliatelle and mix well, add a little salt.
- Serve with the sauce.
