Dejan Ilić, professional chef and carving master reveals the little secrets of great masters: how to make a bender, or the popular Wi-Fi pie.

Dejan is the vice president of the Testival Association and the manager of the event Festival of dough, pasta and bread TESTIVAL 2020, which will be held 29.02. and 01.03.2020. in Dorćol Platz from 10 a.m. to 20 p.m.

How to make a bender?

Saviaja, ingredients for the dough:

  • 1 kg of flour type 400 (soft flour),
  • 1/2 teaspoon of salt,
  • 50 ml of oil,
  • 2,5 dl - 3 dl cold water.

Savija, filling:

  • 400 g of hard cheese,
  • 2 eggs,
  • a little salt
  • 50 ml of oil.

Savija, preparation:

  • Knead the flour, salt, oil and water into a medium hard dough.
  • Knead the dough until it is completely combined, and if necessary, add a little flour.
  • Note: the time of mixing the dough is about 15 minutes, because it is necessary to separate the gluten from the flour, which enables the dough to be stretched later, without cracking and tearing.
  • When the dough is well kneaded, divide it into 5-6 balls weighing about 200 g. This does not have to be a strict measure, ie. weight, but it will give you a uniform crust size.
  • Thin the balls with a rolling pin to a thickness of 1c and place them on oiled trays, and also coat the noodles with oil and cover with cling film, to rest for at least 30 minutes.

Stretching the bark

  • On a tablecloth, gently stretch the crusts, so that the ends are gently stretched in one direction. Roll out the crust to the desired thickness.
  • Fill the crusts developed in this way with cheese and egg filling. Finally, sprinkle the rolled crust with oil.
  • Wrap the crust by lifting one end of the tablecloth, and gently roll the crust. When the crust is rolled, cut off the ends of the crust with the thicker parts, which are not stretched thin enough.
  • Fold the peel in the form of a spiral.
  • Continue each subsequent crust at the end of the previous crust (spiral) and place in a baking sheet (oil the baking sheet and cover with baking paper).
  • Sprinkle with sesame and flax, oil and bake at 200 degrees in a heated oven for 25 minutes.
  • Baked pie should rest a little before serving, if possible.
