Zucchini stuffed with seafood and grilled vegetables - I won't tell you how it tastes, you have to make it and try it, everything else is a story.
Zucchini stuffed with seafood and grilled vegetables, ingredients:
- 3 zucchini, medium size
- 2 onions
- 2 fresh tomatoes
- 300 grams of seafood
- 200 grams of quality rice
- 2 dl of olive oil
- spices, ground pepper, oregano and basil
- 1,5 dl of white wine
- salt to taste
Zucchini stuffed with seafood and grilled vegetables, preparation:
- Fry the diced onion and tomato in olive oil, add the seafood mixture and simmer for ten minutes.
- Pour 2 tablespoons of olive oil into another bowl, fry the rice briefly, add 1,5 dl of white wine, cook until the rice absorbs the liquid.
- Mix the fried seafood with the prepared rice, add salt and spices.
Wash the zucchini, cut them lengthwise or widthwise, as desired. - Clean them from the seeds. Grease an ovenproof dish, line up the zucchini and fill them with the prepared filling. Pour with 2 cups of water, cover with foil and bake in the oven for about twenty minutes.
- At the end of baking, remove the foil for 5 minutes to allow the zucchini to brown.
- Along with the zucchini prepared in this way, serve the grilled vegetables, drizzle with olive oil and some balsamic vinegar.
- Choose the wine yourself.
- Pleasant.
