It is made, traditionally, from sponge cake (Italian Savoiardi) dipped in coffee, layered, with whipped cream made from a mixture of eggs, sugar and mascarpone cheese, seasoned with cocoa. Most of the data about the origin of the Tiramisu recipe indicates the year 1960 in the Veneto region of Italy, in the restaurant "Le Beccherie".
The debate about the origin still exists. Some claim that the tiramisu recipe originated on December 24, 1969 in Via Sottotreviso in Treviso, near Venice. Other sources claim that Tiramisu was first created in Treviso in 1967 by a baker named Robert Linguanotto and his student, Francesca Valori. Alternatively, Tiramisu may have originated as a variation of other layered desserts, e.g. Zuppa Inglese. It is also mentioned in Giovanni Capnist magazine in 1983 by chef I Dolci del Veneto, while the Merriam-Webster dictionary gives 1982 as the date of the first mention of the dessert. Other sources report the creation of this cake in honor of the Grand Duke Cosimo III, when he visited the city of Siena. Despite all of us, recipes for tiramisu were unknown to cooks before the 1960s, and in the Italian language dictionary Sabatini Coletti follows the first mention of the word Tiramisu, only in 1980.
In traditional preparation, tiramisu has similarities with cakes (in addition to the aforementioned Zuppa Inglese) of the Charlotte type, Torino cake, and Bavarese Lombarda, with similar preparation and the presence of certain ingredients such as sponge cake and egg yolk. In the Bavarese cake, butter is also used, but, for example, no mascarpone or coffee is used.

The traditional tiramisu recipe contains a short list of ingredients: biscuits, egg yolks, sugar, coffee, mascarpone cheese and cocoa powder. There is no liquor or egg whites in the original recipe. The original shape of the Tiramisu cake is round, but the shape soon becomes rectangular or square, for easier storage and serving. Alcoholic liqueur is often added.   • 500 g of Mascarpone cheese
  • Pavesini biscuits (cookies, as needed)
  • 3 pieces of eggs
  • 3 spoons of sugar
  • 6 cups of espresso coffee (small espresso cups)
  • Cocoa powder
  • cognac (if not eaten by children)

Recipe Instructions:

Tiramisu Recipe:

  • Make the creamy part first. Separate the yolks from the whites. In a mixing bowl, add egg yolks and sugar. Beat well with a mixer to make a uniform whitish mass. Slowly add the Mascarpone cheese, a little at a time, and continue mixing with the mixer until all the cheese is mixed. In a separate bowl, whip the egg whites into a stiff foam. When the egg whites are beaten, without a mixer, using a large mixing spoon, slowly mix them into the egg yolk and cheese mixture, gently turning them over.
  • Soak Pavesini biscuits in espresso coffee. To taste, you can add one tablespoon of cognac to the espresso coffee (especially if the cake is not eaten by children).
  • Arrange a layer of sponge cake, then a layer of cream, and finish with the cream. Sprinkle the top layer of cream well with sifted cocoa. Cool well and serve cut into large cubes. Pleasant!
