- 3 pieces of eggs
- 3 spoons of sugar
- 6 cups of espresso coffee (small espresso cups)
- Cocoa powder
- cognac (if not eaten by children)

- Make the creamy part first. Separate the yolks from the whites. In a mixing bowl, add egg yolks and sugar. Beat well with a mixer to make a uniform whitish mass. Slowly add the Mascarpone cheese, a little at a time, and continue mixing with the mixer until all the cheese is mixed. In a separate bowl, whip the egg whites into a stiff foam. When the egg whites are beaten, without a mixer, using a large mixing spoon, slowly mix them into the egg yolk and cheese mixture, gently turning them over.
- Soak Pavesini biscuits in espresso coffee. To taste, you can add one tablespoon of cognac to the espresso coffee (especially if the cake is not eaten by children).
- Arrange a layer of sponge cake, then a layer of cream, and finish with the cream. Sprinkle the top layer of cream well with sifted cocoa. Cool well and serve cut into large cubes. Pleasant!
