Japanese wind cake - Ljijana Buzurović
Japanese wind cake - there are many variations of this cake, but in my opinion, this one is the best.
- 15 pieces of eggs
- 30 spoons of sugar
- 300 g of walnuts (ground)
- 15 pieces of walnuts (roasted, chopped)
- 5 spoons of flour
- 9 cup of breadcrumbs
- 3 teaspoons of vinegar
- 1 bag of vanilla pudding
- 250 g of butter (margarine)
- 6 dl of milk
- 300 g of marshmallows
- 250 g of powdered sugar
- Bake 15 tablespoons of chopped walnuts in the oven and cool.
- Beat stiff snow from 5 egg whites with 10 spoons of sugar, then add 1 spoon of vinegar, 3 spoons of breadcrumbs and 5 spoons of chopped roasted walnuts.
- Line a 38x23cm baking tray with baking paper and bake at 200 degrees for about 15 minutes.
- Make 3 such crusts.
- Filling: bring 5 dl of milk to a boil. Beat 8 egg yolks with 5 spoons of sugar, add 1 vanilla pudding and 5 spoons of flour, then stir in the boiling milk and cook until thick and cool. Beat 250 gr. butter with 250 gr. powdered sugar and 7 egg yolks, then add 300 gr. ground walnuts and combine with the previously cooled mixture. Beat the slag foam with water or milk.
- Order: crust, filling, filling, crust, filling, filling, crust, filling, filling.
- Decorate as desired.
