Apple cake, one of the old recipes from our mothers' and grandmothers' cookbooks. An essential summer/autumn treat.

  • 5 pieces of pickled apple
  • 5 cups of sugar
  • 3 cups of flour
  • 1 cup oil
  • 1 teaspoon of baking soda
  • 100 g walnuts (chopped)
  • 50 g of raisins
  • 0,5 teaspoons of cinnamon
  • 1 piece of lemon
  • 0,3 dl rum (or cognac, or 1 glass)
  1. Wash the apples well, peel them and cut them into medium-sized pieces. Sprinkle the chopped apples with sugar and mix. Let them stand for half an hour. Soak the raisins in hot water to let them stand.
  2. After half an hour, drain the juice released by the apples. Take the raisins out of the water and drain.
  3. Add the apples and other ingredients to the mixing bowl. Grate the rind of a whole lemon, squeeze the juice, and add to the other ingredients. Mix well to even out the mass.
  4. Pour the mixture into a baking dish, which needs to be lightly oiled. You can also use baking paper to make it easier to separate the finished cake from the baking dish. Bake in the oven at a moderate temperature for 30-45 minutes, until the top layer of the cake turns brown. Leave the cake to cool.
  5. Serve the cake cold, cut into slices, covered with hot chocolate, or sprinkled with powdered sugar and cinnamon, garnished with mint leaves, and a scoop of vanilla ice cream.
