Rice cake is one of the traditional recipes of Italian cuisine.

  • 1,8 liters of milk
  • 1 piece of vanilla stick
  • 1/2 lemon peel (grated)
  • 200 g of sugar
  • 300 g of rice for risotto
  • 5 pieces of eggs
  • 50 ml of orange liqueur
  • 40 g of raisins
  • 1 piece of orange
  1. Heat the oven to 180 degrees. For baking, use a 24 cm diameter pan, grease it and line it with baking paper.
  2. Scoop out the vanilla. Cut the vanilla pod lengthwise and scrape out the inside.
  3. Finely grate the lemon zest of 1/2 lemon.
  4. In a separate bowl, add milk, cleaned vanilla, and cook for 20-25 minutes on medium heat, so that the rice is almost cooked (al dente). Remove from heat and let cool. Add grated lemon peel.
  5. Separate the yolk from the white.
  6. Beat the egg yolk and add it to the cooled rice mixture. Add orange liqueur, raisins and grated orange peel to the mixture.
  7. Beat the egg whites. Add the egg whites to the mass, gently turning them over (don't mix too hard, because the egg whites will "fall").
  8. Pour the prepared mass into the prepared baking dish and bake in the oven for about 1 hour.
  9. Serve warm or cold. Sprinkle powdered sugar over the cake and grate some orange peel.
