Zucchini cake, a delicious recipe for a light and tasty meal.
- 5 pieces of zucchini (medium size)
- 3 pieces of eggs
- 3 spoons of milk
- 1 tablespoon parsley (chopped)

- breadcrumbs

- Wash the zucchini well and cut off the ends. Leave them in the water for about half an hour. After that, cut them into medium-sized lobes.
- In a frying pan, heat 2-3 tablespoons of olive oil. Add zucchini, parsley and salt, and simmer for about 20 minutes.
- Add 3 eggs to the mixing bowl and beat until the mixture becomes frothy. Add milk and a little breadcrumbs. Add the stewed zucchini to the mass and mix well.
- Grease a baking dish with butter and sprinkle breadcrumbs over it. Pour the mass of zucchini and eggs into a baking dish. Heat the oven to 175 C, and let it bake for 20-30 minutes, until a brown crust forms on the surface. Serve the zucchini cake warm.
