Spanish wind cake - one of the favorite cakes for all ages and all occasions.

Crust (quantities are multiplied by 3), because 3 crusts are needed:

  • 15 pieces of egg whites
  • 600 g of sugar
  • 1,5 piece of lemon juice

File:

  • 15 pieces of egg yolks
  • 15 spoon of sugar
  • 500 g of walnuts (ground)
  • 250 g of butter
  • 1 kg of sweet cream

Peels:

  1. Beat the foamy egg whites with sugar and lemon juice. Bake on an inverted tray, greased and sprinkled with flour, for 45-60 minutes (dry) at 150 C.

File:

  1. Beat egg yolks with sugar. Steam for 20 minutes, at a medium temperature, while stirring. When the filling is cooked, remove from the heat and while the filling is still hot, add the ground walnuts while stirring. Leave the filling to cool. When the filling cools down, add the whipped butter and mix well. In a separate bowl, whip the sweet cream.

Filling the cake:

  1. First fill the 1st and 2nd crust with 1/3 of the filling, and then with 1/3 of the whipped cream. For the 3rd crust, mix the remaining filling and sour cream and fill.
  2. Cool the cake well before serving. Pleasant!

You can decorate the cake in various ways, with whipped cream and seasonal fruits, according to your desire and taste.
