Tortellini with mushrooms, spinach and cherry tomatoes, a very simple recipe. However, it goes far beyond simplicity with its exceptional taste.

  • 1 package of tortellini with cheese (about 500 g)
  • 100 g of mushrooms (champignons)
  • 200 g of spinach
  • 100 g of cherry tomatoes
  • 2 cloves of garlic
  • 1 pinch of crushed hot pepper
  • extra virgin olive oil
  • so

  1. Buy a package of fresh, chilled or frozen tortellini with cheese about 500 gr. Cook according to package directions. Drain.
  2. Wash the mushrooms well and cut them into small cubes. Wash the cherry tomatoes well and cut each one in half. Buy young spinach and wash well. Clean and finely chop the garlic.
  3. Heat a large pan, and pour a little extra virgin olive oil. Add the mushrooms and sauté for a few minutes. Add the cherry tomatoes and simmer for a few minutes. Add the spinach. Simmer for a few minutes while stirring. Add some crushed hot pepper and salt and pepper, to taste.
  4. Add the tortellini and simmer for another 1-2 minutes, so that the tortellini absorb the flavors of the vegetables and spices. Remove the pan from the heat source. Immediately add the grated parmesan cheese and mix well. Serve in large, warmed plates, and sprinkle with some cashews.
