Pickles - Vesna Pavlović - Recipes and Cookbook online

Pickle.

Pickle, ingredients:

  • 13 kg of paprika
  • 2 kg of carrots,
  • 3 heads of cauliflower,
  • 1 kg of onion,
  • 20 l of water,
  • 5 liter of vinegar,
  • 40 spoon of salt,
  • 20 spoons of sugar,
  • 5 bags (10 g each) of grapes,
  • 5 sachets (5 g each) of preservatives.

<strong>Preparation: </strong>

  • Wash the peppers well and cut off the stem of each one, "prick" with a fork in two places. Wash the carrot well (do not peel it), but just cut off the ends. Peel and wash the onion. Separate the cauliflower from the head, then wash each "flower".
  • Arrange pepper, carrot, onion and cauliflower alternately in the barrel in which the pickle will be pickled.
  • Pour the water, vinegar, salt, sugar, grape juice and preservative into a suitable container, mix well and place until all the ingredients melt and combine, then pour into the barrel over the mixed vegetables.
  • Press with something heavy and close well with a lid.
  • Put it in the pantry and let it stand until it sours.

Tip: a traditional, tried-and-true recipe, I've been preparing it this way for years. Since a lot of water and other ingredients are needed, I gradually prepared it like this: 4 liters of water, 1 liter of vinegar, 8 spoons of salt, 4 spoons of sugar, 1 grape skin and 1 preservative - I combine it all, and pour it into the barrel like that 5 times (so that there is enough mixture so that all the vegetables are in the liquid).
