Tzatziki soup - soup or salad, it doesn't matter what you call it, the important thing is that it's good for this summer heat.
- 1 piece of cucumber (larger)
- 400 ml yogurt (if you want to add more yogurt less often)
- 4 cloves of garlic
- 1 teaspoon of olive oil
- 1 teaspoon of apple cider vinegar
- 1 teaspoon mint (chopped, fresh)
- Cut the cucumber lengthwise (unpeeled), remove the seeds with a spoon. Grate the cucumber and let it dry at room temperature for about 30 minutes.
- Mix yogurt into the cucumber, add crushed garlic, olive oil, apple cider vinegar and a teaspoon of mint.
- Add salt and pepper to taste, mix and cool in the refrigerator.
- Garnish with thin unpeeled cucumber rings and mint leaves.
