Tradition and customs play an important role in the cultural identification of each nation. Regardless of whether it is records or oral traditions, information about the way of life in past times allows to protect the authenticity and identity of communities closely linked by the same geographical origin, to preserve traditional knowledge and skills that may no longer be necessary, but represent part of the historical heritage. Traditional food, as a product of the environment, natural resources, but also culture, history and way of life in a certain area, has an important role in the overall tradition of each nation. All peoples, countries, ethnic communities have specific eating habits that differ to a greater or lesser extent from the habits of other communities. They are passed down from one generation to another, play an important role in the folklore and customs of certain regions for hundreds and even thousands of years and contribute to the overall cultural diversity.

Traditional dishes are also part of the heritage with which one first comes into contact when meeting new cultures. I am a person who likes to travel. I like to meet new landscapes, a different way of life, new cities, new people and, of course, new cuisines. Every country I've been to proudly showed off its most beautiful cultural and historical monuments, the most beautiful mountains, rivers, lakes, but all of that was always seasoned with characteristic traditional dishes and drinks, without which all the impressions would still remain incomplete. And with each of those more or less new and unusual dishes, there followed a special story about their origin that revealed part of the tradition, history and national pride of those countries. In Peru, while enjoying the sour taste of ceviche, I learned that this dish of fish and seafood marinated in lemon juice may be 4.000 years old and that only Peruvian ceviche is original, from where it was transferred to other Latin American countries. In Nepal, we were offered dal-bat (dal bhat), a dish of rice, lentils and curry, which is more than a meal for Nepalese.
