Pumpkin rolls - even for those who don't like them...
- 300 g of pumpkin
- 100 g flour
- 1 piece of egg
- 1 piece of egg yolk
- 50 g butter
- 60 g of cheese (to taste)
- 40 g of Parmesan cheese
- nutmeg
- sage (sprig)
- so
- beaver
- Cut the pumpkin into cubes and cook for 20 minutes in salted water.
- When cooled, mash into a puree, then mix at a low temperature for ten minutes to evaporate the liquid. Mix the flour into the warm porridge, then the beaten eggs and yolks, grated cheese, salt, pepper and walnuts.
- Mix with a whisk to get a stiff dough.
- Place the dough in the refrigerator for an hour.
- Divide the dough on a floured surface and roll into sausages.
- Cut them into 2-3 cm long balls and press them down with a fork. Drop them into the boiling water one by one and as soon as they float to the surface, take them out.
- And then fry them in melted butter.
- Garnish with sage, sprinkle with Parmesan and serve immediately.
