  • 300 g of flour
  • 60 g density
  • 90 g of powdered sugar
  • 210 g of butter (cold)
  • 60 g almonds (ground)
  • 2 pieces of yolk
  • apricot jam (for filling)
  1. Mix flour, shortening, powdered sugar, add ground nuts, egg yolks and butter cut into sheets.
  2. Knead the dough, wrap it in PVC foil and leave it in the fridge for 1 hour.
  3. After an hour, roll out the dough thinly on a floured work surface and use a rolling pin or a glass to cut out circles.
  4. Arrange them on parchment paper, separated from each other, and bake for 7 minutes at 200 degrees.
