Stew with beef and vegetables - during the summer, when we have a lot of fresh vegetables, you can easily make a healthy meal, and if you add some protein through meat and spices, you will get a meal with a lot of flavor, and if you complete it with a healthy salad, you have a complete meal.

Stew with beef and vegetables, ingredients:

  • 2 pieces of zucchini (medium sized diced)
  • 1 piece of red pepper (cut into rings)
  • 2 pieces of young carrots (cut into rings of medium size)
  • 4 sprigs of parsley (coarsely chopped)
  • 2 sprigs of celery (chopped coarsely)
  • 500 g of beef (cut into cubes)
  • 1 onion (smaller, finely chopped)
  • 2 cups rice (long grain)
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of granulated garlic
  • 1 teaspoon of fine sea salt
  • 0,5 teaspoon of powdered ginger
  • 2 spoons of dried ground vegetables for soup
  • 2 teaspoons of sweet red ground pepper
  • 10 pieces of dried cherry tomatoes
  • 20 pieces of cherry tomatoes (smaller)
  • 2 tablespoons olive oil

Stew with beef and vegetables, preparation:

  1. Put the meat in a suitable pan and dry-fry it until it browns a little. Add oil, prepared vegetables, spices, rice, and mix everything well to fry a little and release flavors.

  2. Pour water to cover the vegetables and meat and simmer covered until the meat is soft and the rice absorbs the excess liquid. Sprinkle with chopped parsley.

  3. Serve hot as a main dish sprinkled with parsley and cherry tomatoes and with an additional salad if desired. Pleasant!

I dry cherry tomatoes myself and store them in the freezer, I don't soak them in oil. If I really want it to be in oil, I take some out in a jar and pour oil over it.
