Happy Roll - Ljiljana Stanković

Merry roll - decorative, lean roll. Prepared without eggs, it is excellent for fasting days.

  • 2 pieces of wafer (sheet)

For the filling:

  • 400 g of sugar
  • 2 dl of water
  • 125 g margarine
  • 200 g ground biscuit
  • 50 g of white chocolate
  • 50 g dark chocolate
  • 50 g walnuts (chopped)
  • 50 g of raisins
  • 200 g jelly candies (chopped)
  1. Combine sugar and water in a saucepan, then put it on the stove and cook until the sugar dissolves.
  2. Add the margarine and stir until the margarine melts, then remove from the heat and add the ground biscuits.
  3. Divide the resulting mixture into two parts. Put melted white chocolate in one part, and dark chocolate in the other.
  4. Leave both fillings to cool.
  5. After that, add chopped jelly candies to the white chocolate filling, and nuts and raisins to the dark chocolate filling.
  6. Place the wafers between wet cloths and leave them to soften for a few minutes.

Final procedure:

  1. Take one sheet of wafer, then cover half of it with filling with jelly candies, and the remaining part with another filling. Wrap it in a roll and place it on a tray.
  2. Make another roll in the same way.
  3. Break the white and dark chocolate into cubes, then melt at a moderate temperature with constant stirring.
  4. Coat the rolls, let them cool, then cut into rings and serve
Be careful not to overheat the cloth when rolling the wafer sheets, otherwise the wafers will become too soft.
