Since ancient times, green beans was, along with beans, the main food and carrier of health for the people of our climate. Many historical and ethnological data have been preserved about it, and a particularly important source is the book by Stanoj M. Mijatović, edited by Jovan Erdeljanović, Ph.D. and which was printed in 1908 in the State Printing House of the Kingdom of Serbia.
Healthy food: how were green beans prepared in the old days?
Green beans were prepared in summer and autumn. The method of preparation was both fatty and lean, but the lean version was more prepared.
Lean green beans were prepared in this way:
Green beans would be harvested early in the morning, then cleaned and cut into small pieces, about a centimeter long. Then they would wash her and fill the pot. They would pour hot, boiling water over it and add salt. In some households, they would acidify it with vinegar, and in others, they would add green plum or green grapes. Sometimes they would add finely chopped onions. Fat green beans were prepared in the same way, only cream or an egg beaten in milk was added to it.
Green beans were rarely prepared with meat and bacon.
Green beans were also prepared in a casserole ("on a casserole"). Green beans would be cut off the stalks and tops, steamed and put in a pan. Then they would make a good paste, to which they would add a handful of wheat flour, and when it was ready, they would pour hot water over it, add salt, mix it well and sprinkle it over the green beans. Then they would cover the pan with the green beans with hot sauce, so that it would cook well.
