My favorite is this plum Stanley. This type of plum has beautiful red flesh and a thin skin, which literally splits open during cooking, while this is not the case with other types. At the same time, they retain their beautiful burgundy color, which you can enhance by adding lemon, but only if the plums are too ripe, because then they are the sweetest, otherwise they will be sour, so you would have to add a little sugar.

Baked plum jam, ingredients:
- 3 kg plum Stanley
- 1 spoon of liquid vanilla
Baked plum jam, preparation:
- Wash the Stanley plums, cut each one with a knife and remove the pits. Put the cleaned plums in a baking dish, cover with a baking dish lid and put it in the oven at 180C degrees to bake.
- After one hour, open the oven and stir the plums, during which time they will heat up and release their juice. Cover them again and let them bake for another hour. During this time, the plums will cook 90%.
- Now add vanilla or cloves, 2 pieces, as I did this year. At this stage of roasting the plums, if you don't like the taste of the plums, you can chop them up with a stick mixer or just mix them a little so that you can still taste the plums. I like it when you can feel the plums, although this year I chopped them up a bit. Put it back in the oven for another hour and then the jam is ready.
- Pour hot jam to the top into sterilized jars and close with metal lids. Turn the jars over and place them on the lids. Cover the jars and let them cool completely. Then turn them over and store them in the pantry.
- I got 2 large jars from this amount of plums.
Store the opened jar in the refrigerator, but not for too long as it will harden.
