This is a simple recipe for Greek pancakes, with ingredients that everyone has in their kitchen. They are ready very quickly.
- 115 grams of flour
- 1 piece of egg
- 280 ml of milk
- 1 tablespoon of oil
- oil (for frying)
- 1 pinch of salt
- Add flour and salt to a deep dish. Add 1/4 of the milk. Beat with a mixer until a thick and smooth mass is obtained. Add the remaining amount of milk and beat with a mixer.
- Pour the mixture into a jug and let it stand for 30 minutes.
- Heat a pan for baking pancakes, and coat it with oil. Pour the pancake batter evenly in a circular motion.
- Bake at a moderate temperature, one side for about 1 minute, until it gets a light golden color. Turn to the other side and cook for about 30 seconds.
- Transfer the baked pancakes to a plate. If you are not going to serve them right away, place them one on top of the other, with baking paper between them. Keep them in a slightly warmed oven until ready to serve.
- Serve warm Greek crepes, sprinkled with sugar and lemon juice.
