Spinach soup with sour cream, a delicious and colorful soup with sour cream and toasted bread.
- 1 tablespoons of olive oil
- 1 red onion (coarsely chopped)
- 2 cloves garlic (crushed)
- 1 teaspoon cumin
- 1 l of water
- 1 piece of chicken cube for soup
- 2 pieces of white potatoes (cut into small cubes)
- 500 g young spinach (chopped)
- 2 dl sour cream
- so
- freshly ground black pepper
- toasted bread (for serving)
- Heat the olive oil in a saucepan over medium heat. Sauté the red onion for about 5 minutes. Add the garlic and cumin and sauté for about 30 seconds, so that the cumin releases its aroma.
- Add water and chicken stock cube. Turn up the heat and bring to a boil. Add the potatoes and reduce the heat to medium. Boil the potatoes for 10 minutes, without overlapping. Add the spinach and cook for about 3 minutes. Set aside for about 10 minutes to cool slightly.
- Transfer part of the broth to a blender and process. From several times, process the entire amount of broth, to get a uniform mass. Return to the pot and cook for another 4-5 minutes, on medium heat, stirring. Add salt and pepper to taste.
- Serve in deep bowls. First put a piece of toasted bread, then pour the broth over it. Add a large spoonful of sour cream to each bowl.
