Ajvar with mustard and hot peppers - ajvar prepared in this way has a wonderful taste and can be stored for 2 years...

  • 17 kg of paprika (red, 1 box)
  • 3 kg blue eggplant
  • 2 liter of oil
  • 4 spoons of sugar
  • 8 spoon of salt
  • 2 spoons of mustard
  • 1 tablespoon of vinegar
  1. Roast and peel the peppers (squeeze them in a potato sack). Then roast the blue tomatoes (in the oven), peel them and drain the excess water in a colander.
  2. Pour 1 l. oil in a pan to heat well, pour ground pepper, hot peppers and ground blue tomatoes. Cook and stir constantly, half way through cooking add more oil, sugar and vinegar, and towards the end of cooking pour salt and mustard.
  3. Pour the hot ajvar into clean and heated jars, tie them immediately with lids and put them in a vat where we put a blanket or a warmer sheet. Cover everything and leave the ajvar covered like that until the next day.
  4. Ajvar prepared in this way can last up to two years.
