Kiwi Cake - Angela Kish
For the dough:
- 250 g of ground biscuits
- 100 g margarine
- Mineral water
For the cream:
- 5 dl yogurt
- 2 bags of gelatin
- 4 kiwis
- 140 g of sugar
- 3 tablespoons of lemon juice
For decoration:
- 2-3 kiwis
- Melt the margarine, mix it into the biscuit and add sour water as needed. Put the mixture in a small tray and level it.
- Cut kiwi into cubes, add 4 spoons of sugar, lemon juice and cook for 4-5 minutes, cool. Prepare the gelatin according to the instructions, mix the remaining sugar, melted gelatin and kiwi into the yogurt. Leave it to cool and before it hardens, pour it on the biscuit, flatten it and leave it overnight. The next day, cut it into cubes and put a slice of kiwi on each one.
