Chimney Cake is an irresistible, delicious, aromatic cake - a seemingly ordinary warm pastry, which everyone falls in love with from the first bite. This is our suggestion for the ideal holiday treat!
In most travelogues about Transylvania, there is sure to be someone who talks about a delicious pastry called Kirto Kolaš (Kürtőskalács). It is, in literal translation: chimney cake. Made from simple ingredients, a strip of dough is wrapped around wooden rolls, sprinkled with plenty of sugar, and baked over an open fire, or in specially designed ovens.
While it's still hot, it can be sprinkled with various ingredients, or it can be left in its natural form, with a shiny crust of caramelized sugar.
The interesting name of this cake comes from a Hungarian word Kürtős (chimney). Its appearance strongly resembles a chimney, and the steam coming out of a hot, ready-made cake resembles smoke coming out of a chimney. Kurtőskalács is the national cake in Hungary, but this cake can be found and consumed in over 50 countries.
The recipe for Chimney Cake is quite simple - it is made from sweet dough with yeast. Rolled strips of finished dough are wrapped around a wooden roller, which is placed on a skewer, and at the end, well sprinkled with crystal sugar.
It is baked over hot charcoal, or in special ovens, until its surface turns golden-brown, with a shiny crust made of caramelized sugar. As soon as it is removed from the heat, the surface of the cake can be sprinkled with a lot of additional ingredients, such as ground nuts, chocolate powder, cinnamon powder, etc...
