Chrono buns.

  • 2 eggs
  • 300 ml of sour milk with probiotics
  • 60 ml of olive oil
  • 2 tablespoons tapioca (or psyllium)
  • 2 tablespoons of spelled
  • spoonful of Himalayan straight malazan coffee
  • 2 level teaspoons of baking powder
  • whole wheat flour to get an extremely soft dough
  1. I added all the ingredients except the wholemeal flour and turned on the mixer to knead for a few minutes. I reduced it to the slowest speed and slowly added one cup of wholemeal flour at a time. When I got a mass that is not very thick and still not a soft dough, I stopped the mixer and put the dough on a floured work surface. I sprinkled a spoonful of flour over the dough and gently kneaded the dough to get a soft dough without sticking to the fingers.
  2. I divided it into 5 parts. I spread each round with my fingers to get a bun with a diameter of 12 cm. I arranged them in a pan and baked them in a preheated oven at 220C/30'. However, you should pay attention because each oven is individual, and electricity can be deceiving.
  3. They get better every time, but these are really beautiful, soft and airy now.
Tapioca and psyllium are not necessary but it is much better with them! Ordinary sour milk or kefir can also be used! Use the flour you like!
