Chocolate cupcakes – Kristina Gašpar

  • 4 eggs
  • 150 g of powdered sugar
  • 1 bag of vanilla sugar
  • 150 g of butter
  • 100 g of chocolate
  • 100 g of ground hazelnuts
  • 40 g of chocolate pudding
  • 50 g of finely crushed biscuits
  • Necessary ingredients for the filling:
  • 2 bags of vanilla whipped cream
  • 2 dl of milk
  • 100 g of chocolate
  1. Instead of whipped cream and milk, you can use sweet cream and make genache cream. According to your taste and desire.
  2. Beat egg whites with 100 g of sugar. Beat until the mixture becomes stiff. Soften the butter, then beat it with 50 g of sugar, egg yolks and vanilla sugar. After that, add hazelnuts, biscuits, pudding and melted chocolate. Mix everything well. Gradually add beaten egg whites and mix gently.
  3. Bake the cookies in a baking tray that you have previously lined with paper baskets. Pour one spoonful of the mixture into each basket (2/3 of the basket should be filled). This amount is enough for 10-12 cakes.
  4. Bake the cookies for 15 minutes at 200 degrees.
  5. When they cool down, cover them with the filling, which you will prepare as follows: whip the whipped cream with 1,5 dl of milk. Melt the chocolate with 0,5 dl of milk. When it melts, remove from heat and cool, stirring constantly. Combine the cooled chocolate with whipped cream.
  6. Decorate them as desired.
