Biscuits with lemon - delicious crunchy biscuits with tea or coffee.
- 120 grams of margarine (or butter, softened)
- 130 grams of sugar (white)
- 1 piece of egg
- 1 dl lemon (juice)
- 1 teaspoon lemon (a little lemon zest)
- 350 grams of flour (sharp, white)
- 10 grams of baking powder (bag)
- 2 grams of salt (fine)
- 2 tablespoons sugar (powdered)
- Mix margarine and sugar and beat with a mixer. Beat until the mixture is foamy.
Add the egg, juice and grated lemon peel. Beat a little more until the mixture is even. Add flour, salt and baking powder. Knead the dough with your hands until you get a nice dough ball. From the ball you have kneaded, tear pieces of dough the size of a smaller walnut.
- Shape each piece of dough into a ball and gently press (flatten) with your palms to get a round cookie.
- Line the pan with baking paper and arrange the biscuits with a small gap between them. Bake in a heated oven in the lower part of the oven for about 15 minutes. When the cookies start to get a light brown color on the bottom, take them out of the oven (they should be baked and lighter)
- Sprinkle them with powdered sugar and serve.
