Recipe for panettone.

Panettone, ingredients:

For the dough:

  • 500 g flour
  • 10 g of fresh yeast
  • a bit of salt
  • 2 bags of vanilla sugar
  • 200 g of powdered sugar
  • 150 ml of lukewarm milk
  • 150 g of softened butter
  • 4 eggs
  • 100 g of chopped almonds
  • 50 g of roasted chopped hazelnuts
  • 200 g of chopped dried apricots
  • 150 g of chopped prunes
  • 50 g of candied cranberries
  • 100 g of raisins

Panettone, preparation:

  • Cut dry fruits into smaller pieces, chop almonds and hazelnuts. Mix everything and set aside in a bowl.
  • Put yeast, a teaspoon of sugar and a spoonful of flour in lukewarm milk. Leave the yeast to activate.
  • Put the eggs, sugar, softened butter, vanilla sugar in a large bowl and beat with a whisk until the sugar dissolves.
  • Then add activated yeast to it and mix everything well.
  • Lightly add flour and knead the dough.
  • Divide the resulting dough into two parts, place in two smaller bowls and leave in a warm place to double in size. Divide the chopped almonds and hazelnuts into two parts.
  • Take the dough from the first bowl, mix it and add one half of the fruit, put it in the panettone mold and let it double in size, do the same with the remaining dough and fruit.
  • Put the finished cake in a preheated oven at 180 degrees for 35 minutes, then reduce the oven to 150 degrees and bake for another 25 minutes.
  • Dust the finished panettone with sugar.
