Liver with vegetables and eggs - When you have little time to prepare lunch, this is a great recipe.
- 300 g of pork liver
- 2 pieces of red pepper
- 2 heads of onion
- 1 piece of potato (1 large or two small potatoes cooked in their skins)
- 3 pieces of eggs
- salt (to taste)
- pepper (to taste)
- 5 tablespoon of oil
- Finely chop the onion and pepper
- Pour the oil into the pan and when it is hot, add the onion and pepper
- Fry for about 5 minutes, stirring all the time so it doesn't burn.
- After that, add the diced liver.
- Fry everything together for about 5 minutes, then add boiled and peeled potatoes cut into cubes
- Now mix everything well and fry for another 5 minutes.
- Take care not to burn
- Finally, beat the eggs and pour over the liver and vegetables.
- Only now add salt and pepper to taste
- Mix and when the eggs are baked, remove from heat.
- Serve warm.
