Jaffa cake.

Jaffa cake, ingredients:

You will need for the cake:

  • 24 spoons of sugar,
  • 24 tablespoons of milk,
  • 24 spoons of flour,
  • 3 eggs,
  • 1 baking powder,
  • 5 tablespoon of oil.

For the filling:

  • 2 dl of water,
  • 200 g of sugar,
  • 3 tablespoons of apricot jam,
  • 1 frozen grated orange (or a whole orange ground into a super chopper or ground in a meat grinder).

For the frosting:

  • 100 g of cooking chocolate,
  • 4 tablespoons of milk,
  • 4 spoons of sugar,
  • 2 tablespoons of oil.

Jaffa cake, preparation:

  • Put sugar, milk, eggs, oil in a deep bowl and mix with a blender.
  • Add flour and baking powder to the mixture and beat with a mixer.
  • Pour the resulting mass into a large pan that has been greased and sprinkled with flour or lined with parchment paper.
  • Bake in a heated oven at 200 degrees for about 20 minutes, then reduce the temperature to 180 degrees and bake for another 20 degrees, that is, until the crust is golden.
  • Remove the crust and leave to cool.
  • When the crust has cooled down, cut the edges around the biscuit around, on all four sides, so that two thirds of the crust remains on which the filling is placed.
  • The cut edges of the crust will be used for the filling.

Preparation of the filling:

  • In a large saucepan, put water, sugar and stir and add grated orange and apricot jam and cook a little more. Take the obtained mass off the stove and add the crumbled edges of the sponge cake and mix well to obtain a uniform mass, i.e. fill.

 

  • Place the sponge cake on the tray and spread the hot filling over the sponge cake.

 

  • Prepare the glaze by putting broken chocolate, milk, sugar and oil in a saucepan and let it melt with constant stirring. Put the glaze over the filling and let it cool.
  • Cut the cold cake into cubes or bars as desired.
