Lenten wreaths made of vine leaves - Maja Levaja
Lenten Vine Leaf Wraps, original Greek recipe, sent by Maja Levaja.
Lenten vine leaves, ingredients:
- 0,5 kg of vine leaves
- 2 cups of rice
- 2 cups onion (grated)
- 2 pieces of zucchini (grated)
- 5 tablespoons mint (finely chopped)
- 3 tablespoons of lemon juice
- 1 lemon (cut into wedges)
- 1 cup of olive oil

Lenten vine leaves, preparation:
- Soak the vine leaves in boiling water and let them cook for 2-3 minutes.
- Put the onion in a little water and salt and cook it until it softens and all the water evaporates from it. Add half of the measured oil and fry the onion for a few minutes until it turns slightly brown. Remove the onion from the heat and add the zucchini, mint, rice, salt and pepper.
- Put one spoonful of this stuffing on each vine leaf and fold it into a ribbon.
- Cover the bottom of the pan with several vine leaves, arrange the scallions in a circle, and then in the rows between which place the lemon rings, and so on until the scallions are used up. Pour over 3 cups water, lemon juice and remaining oil. Add salt and pepper to taste and cover with a plate so that the slices do not move during cooking. Cook on moderate heat until all the water evaporates.
