Beer Pancakes – This recipe serves a meal for 4 people and makes 12 pancakes in total. This dish is especially recommended for those who have a hard time tolerating cuisine based on dairy products.

Pancakes with beer filled with spinach, ingredients:

  • 175 g flour (125 g for pancakes, 50 g for filling)
  • 750 ml beer (1/4 for pancakes, 1/2 l for filling)
  • so
  • 1 tablespoon of oil
  • 3 pieces of eggs
  • 100 g margarine (25 g for pancakes, 75 g for filling)
  • 400 g spinach (cooked and drained)
  • 30 g parmesan cheese (grated)
  • 30 g cheese (grated)

Pancakes with beer filled with spinach, preparation:

  1. Sift the flour into a bowl and gradually pour in the beer, stirring so that no lumps form. Add salt, oil and eggs - you will get a thick, smooth mass.
  2. Wrap pieces of butter in clean cheesecloth and grease a well-heated pan with it.
  3. Bake very thin pancakes and place them on a heated pan.
  4. Prepare the filling: heat the margarine in a small bowl, add the flour and stir to avoid lumps. Then thin it with beer, pouring it little by little. Add salt and stir over moderate heat for ten minutes. Off the heat, add both types of grated cheese (mixed together).
  5. Chop the cooked and drained spinach and season it with a little margarine on the fire. When it cools down, pour it into a bowl, mix it with half of the prepared sauce (a thick cream must be formed, which must be salted if necessary).
  6. Spread one spoonful of that sauce on each pancake and roll it up.
  7. Place the pancakes in a refractory dish greased with margarine, pour over the rest of the sauce, then grated cheese and bake for about 20 minutes in an oven heated to 175 degrees C.
  8. Serve them warm in the bowl in which they were baked.
