Pie with red currants.
I finished the first part of the book "MOTHER WILL BE BACK" and I had the impression that my son Petar was standing behind me and was dictating what to write. Sometimes he would joke with me and dictate a recipe. Petar wrote poems very beautifully, every stanza was a rhyme. I always thought that if I ever wrote something, it would be a book of simple recipes that are quick and easy to make, because I don't like to stay in the kitchen for long. But it didn't turn out that way.
Pie with red currants, ingredients:
- 500 g of ready-made pie crusts,
- 3 eggs,
- 10 spoons of sugar,
- 10 tablespoons of ground biscuits,
- 2 dl yogurt,
- 10 tablespoons of oil
- 2 vanilla sugar and
- fruit as desired (the more fruit, the juicier the cake will be) I received red currants as a gift, so I put about 1 kg.
Pie with currants, preparation:
- Beat the eggs, sugar, oil, vanilla sugar, yogurt well and finally add the ground biscuits.
- Two joined crusts with a little oil, that is, put the first crust and coat it with oil, then cover with the second crust.
- Coat the crust with a few spoonfuls of the mixture, put another crust over the mixture, then the mixture and finally, spread the candied currants.
- Add sugar to taste, I added ten spoons of sugar to 1 kg of currants.
- Then spread the washed and sugared currants and roll up slowly.
- First fold the outer ends inwards, and only then roll them so that the filling does not leak.
- Carefully transfer to a pan lined with baking paper.
- And so on until you use up the skins, filling and currants.
- Bake the pie in a preheated oven at 180℃ for 35 minutes.
