Onion Potage - Kristina Gašpar

Potage from onions - I know that the vast majority, at least in my environment, do not like cooked onions. Almost no one eats onion from soup, and it is my favorite delicacy. In the family, everyone saves the onion from the soup for me ;).

Don't frown when reading the ingredients for this potage because you will be pleasantly surprised by its taste.

  • 300 g of onion
  • 2 tablespoons of oil
  • 3 spoons of polenta
  • to taste: salt (pepper, ginger powder, parsley...)
  1. Clean the onion and cut it into smaller pieces. Boil for 15 minutes in 1/2 l of water. Drain and save the water, and blend the onion with a stick mixer or in a blender until you get a thick paste (with gradual addition of water as needed). Fry the palentia briefly in oil, pour in the blended onion and half a liter of water. Season to taste and cook for 3 minutes from the moment the broth boils. At the end, add a chopped parsley leaf.
  2. If desired, you can add sour or neutral cream.
