This proja is a little different from the usual ones because it has hot pepper and oregano. Of course, it is a projara. But I always call projara a projama.
Proja, ingredients:
- 4 eggs
- 1 cup of sour water
- 2/3 cup oil
- 1,5 cups of corn grits or polenta
- 1,5 cups plain flour
- salt to taste
- 1 teaspoon of baking powder
- 1/2 teaspoon crushed hot pepper
- 1/2 teaspoon oregano
- 500 g of small cheese (softer)
Eating, preparing:
- Beat the eggs, then add all the other liquid ingredients.
- Stir in the flour, then the cheese.
- Pour the mixture into the pan, sprinkle with seeds (if desired).
- Place the tray in an unheated oven and turn it on at 200-220 degrees.
- Bake it until it is nicely browned.
- The length of baking depends on the thickness of the project.
Tips:
I used sesame, flax and cumin seeds for sprinkling. You can adjust the amount of hot pepper and oregano to taste. If you use a firmer cheese, add more liquid. I usually put the dough in a cold oven. I like the texture better when I bake it that way.
