Making proja is like a series of contradictions, because proja is always made from several ingredients. You can try to keep things under control, so that every ingredient has its place in the pan, in that miniature world, because making food is empowering, and you have complete control over all the ingredients.

Adding some spinach or greens to the proja gives it density, softness and a nice contrast of green color. Something else should be added to bring these ingredients together. That something, to keep the balance, was cheese.

When making this special proja, with the addition of greens or spinach, you should mix the cornmeal, cream and warm water a few minutes before adding the other ingredients. This creates a juicier end result. With the addition of moisture from the greens or spinach, as well as the fat from the cheese, juiciness and softness are guaranteed. If you are a fan, you can add some chives to the mixture to play up the flavors. If you like a sweeter taste, you can add a teaspoon of sugar. Proja prepared in this way will certainly not crumble and crown.

Proja with greens, ingredients:

  • 500 g greens (or spinach)
  • 500 g of proja flour
  • 3 pieces of eggs
  • 300 g of cheese (white semi-fat)
  • 1 spoon of cream
  • 2 tablespoons of oil
  • 2 spoons of milk
  • 1 bag of baking powder

Proja with greens, preparation:

  1. Wash greens or spinach well and chop. Leave to drain well.
  2. Beat the eggs. Add crushed cheese, a spoonful of cream, oil and milk. Add proja flour and combine the mass by mixing. Add one baking powder. Mix greens or spinach into the mixture. Pour the mixture into a greased baking tray. Bake for about 40 minutes at a moderate temperature.
Proja with greens is served warm, with yogurt and sour milk.
