Seeds have less fat than stone fruits, so they are used more often. Sesame seeds, sunflower seeds, pumpkin seeds, almonds, walnuts, hazelnuts, peanuts, chestnuts, pistachios, pine nuts, etc. are mostly used.

Sesame seeds have been used in human nutrition for thousands of years. In the macrobiotic diet, they are traditionally fried and mixed with sea salt, ground, and thus we get a tasty and highly nutritious addition to dishes, or a spice, called gomaschio, which is used almost every day. They can also just be fried and added to soups, salads, cereals or vegetables. Sesame seeds are used to make tahini, a mild and sweet paste, as well as butter. They have a high percentage of calcium and iron.

Chestnut is most often added and cooked with other ingredients in various dishes, for example with integral rice or azuki beans, which thus increases the sweet taste. It is also used in desserts.

Seeds and nuts have many nutrients. They are rich in fiber, iron, calcium, vitamins A, B and E, as well as other minerals and vitamins. Compared to meat and dairy products, they have a higher percentage of protein, and their oils and fats are either neutral or unsaturated in composition.
