Cherry sauce - Nada Georgijev-Gačić - Recipes and Cookbook online

Cherry sauce is a tradition. Simply, it is difficult to imagine a real, festive, Bačka, Srem or Banat table without this sauce. Although Wiener schnitzel is Wiener schnitzel. You know how they are made.

Cherry sauce, ingredients:

  • 400 g of split cherries
  • 2 tablespoons flour
  • ½ dl of oil
  • a pinch of salt
  • 2 teaspoons of sugar

Cherry sauce, preparation:

  • Cover cherries (fresh or frozen) with water, until they are soaked, add sugar and cook them, but not longer than ten minutes.
  • Pour oil into a small bowl and add flour, and fry it on low heat, but so that it remains light.
  • Pour the fried flour into the hot, cooked cherries (leave the water in which they were cooked) and, while stirring gently, add salt and cook the sauce until it becomes homogeneous and thick enough. If it seems too thick, feel free to add water.

This sauce can also be used for desserts, but then instead of flour, you use a thickener that needs to be dissolved in a little cold water and, of course, requires a little more sugar. This fruit dressing is a wonderful treat in the summer, chilled and topped with a little sweet cream.
