Spaghetti bolognese. The Best Ever Spaghetti Bolognese is super easy and a true Italian classic with a meaty, chili sauce.
Spaghetti Bolognese, ingredients:
- 1 tablespoon of olive oil
- 4 pieces of smoked bacon, finely chopped
- 2 medium onions, finely chopped
- 2 carrots, cut and finely chopped
- 2 sticks of Mediterranean celery, finely chopped
- 2 cloves of garlic finely chopped
- Finely chop 2-3 sprigs of rosemary leaves
- 500 g of minced meat
For the bolognese sauce:
- 2 x 400 g tins of tomatoes
- a couple of basil leaves or a teaspoon of dried basil, save a little for decoration
- 1 teaspoon of dried oregano
- 2 bay leaves
- 2 spoons of tomato puree
- 1 cube of beef soup
- 1 red chili pepper (small, thin), seeded and finely chopped (optional)
- 125 ml of red wine
- 6 cherry tomatoes cut in half
To season and serve
- 75 g of grated parmesan cheese, plus extra for serving
- 400 g of spaghetti
- crusty bread for serving (optional)
Spaghetti Bolognese, preparation:
- Place a large skillet over medium heat and add 1 tablespoon olive oil.
- Add 4 finely chopped pieces of bacon and fry for 10 minutes until golden and crispy.
- Lower the heat and add 2 onions, 2 carrots, 2 sticks of celery, 2 cloves of garlic and the leaves of 2-3 sprigs of rosemary, all finely chopped, then fry for 10 minutes.
- Stir the vegetables often until they are soft.
- Increase the heat to medium, add 500 g of minced meat and simmer, stirring, for 3-4 minutes until the meat is golden brown.
- Add 2 tins of tomatoes, basil, 1 teaspoon of dried oregano, 2 bay leaves, 2 tablespoons of tomato puree, 1 cube of beef, 1 cleaned and finely chopped red chili (optional), 125 ml of red wine and 6 halved cherry tomatoes.
- Stir with a wooden spoon and chop the canned tomatoes.
- Bring to a boil, reduce to a simmer and cover with a lid.
- Cook for 1 hour and 15 minutes, stirring occasionally, until you have a rich, thick sauce.
- Add 75 g of grated Parmesan and mix well.
- When the bolognese is almost ready, cook 400g of spaghetti following the instructions on the package.
- Drain the spaghetti and mix it into the Bolognese sauce or serve the sauce on top.
- Serve with more grated parmesan cheese, garnish with fresh basil leaves (if you have them) and crusty bread, if you like.
